you gotta make your own stock its the best! we save all our ends, stalks, skins etc. in a big bag in the freezer and once the bag is full throw it in the big pot with some water and let it simmer all day. sometimes I add some bay leaves and more garlic.
You could probably use chicken! I love chicken chili too. Or skip the meat and add cubed sweet potatoes. OR use those meatless crumbles, I like those too.
Did Izzy try it? How'd she do with it? I love to make chili in the winter and am always looking for new recipes, just have to make sure it's not too spicy for the kiddles.
I AM FILLED WITH DELIGHT. My darling husband makes a vegetarian chili with BLACK OLIVES and-- no. Incorrect. I would have made this with ground beef but stew beef sounds amazing. My daughter (14) might even eat it since she is down with black beans?? And why had I never thought to cuisinart this type of biz? My sorry ass would've been chopping veg all day. Huzzah! I will report back on my own chili makings-- our crock pot is much smaller so I'll have to size down.

Also I think a handful of red pepper flakes wouldn't go amiss
