It’s taken me a long time to find a breakfast “routine”. I spent years desperately wanting something simple (ish) and predictable. I have finally landed on two breakfasts that I can switch between, keeping me feeling truly satisfied for many hours afterward and, most importantly, I enjoy them. Fingers crossed, this is a long term relationship. Here is one of the two recipes (the other is Lou’s Special Smoothie).
Adelle’s Breakfast Oatmeal
1/2 cup of rolled oats
1/2 cup of oat milk (whatever milk you like)
1/2 cup of water
shake of ground cinnamon
1/2 cup of blueberries or strawberries
Toppings
Maple Syrup and ground flax seed, hemp and chia ( I buy a pre-ground mix of those three from Whole Foods)

I put all the ingredients in at the same time in a small soup pot on the stove (except the toppings of course, you silly goose). I cook the mixture on medium to low and fuss with it a lot. Stirring pretty much the whole time. If you look away, oatmeal can quickly turn into a thick unappealing blob that’s now burnt to your nice little soup pot. Who needs that? Just pay attention. This will take approximately 5ish minutes of stirring. Don’t fret, your breakfast will be ready in a jiffy! See below for two little video examples of a nice consistency right before you pull it off the stove.
With blueberries (my usual go-to, fresh or frozen work fine)
With strawberries (I prefer blueberries but we had some strawberries that were on the way to overripe and possibly moldy within a day or two-so I used those!)
Scoop your oatmeal into a bowl and add Maple Syrup (why not?) and your flax mix. Put your spoon in, scoop up the oatmeal, put it in your mouth (possibly blow on it), chew, chew some more and swallow.
Enjoy!
* A note on the portion. You may be thinking, 1/2 cup of oatmeal is not enough to fill me up Adelle. And then you wonder, should I use more oatmeal?
YOU may do that if you wish. I went down that path many times thinking it was “not enough”. But here’s the thing, oatmeal is very filling. In the past when I went for 1 cup of oatmeal, I’d end up every time with half a bowl of oatmeal left staring at me getting thicker by the second and colder. A cold thick oatmeal blob does not appeal to me. I like to scoop up my half a cup when it’s fresh and warm and YUMMY. That’s my two cents.
Can’t wait to make one of my own!! It also seems really tasty!
Oh yeah.. I'm a maple syrup in oatmeal all the way kinda guy. My wife introduced peanut butter to the mix - a tablespoon per serving of the crunchy, not-too-processed, no added sugar, "what are you, a rambunctious five year old with all that sweetness?" kind of peanut butter. I'm a fan. It goes in at the beginning too unless you like an unincorporated blob.
Thanks! Now I'm craving a warm cozy breakfast.
