The last recipe I made for my Slow Cooked self imposed challenge was
Crockpot Creamy Broccoli Cheddar Chicken by Tieghan Gerard (known as Half-Baked Harvest)
I’ll admit, it doesn’t look that amazing, but flavor-wise, it was tasty. Lou kept remarking that it felt like food from his childhood, familiar and comforting. I was reminded of a dish my mom called “turkey ala king”, she would make this recipe the day after thanksgiving with the leftover turkey. Essentially, it was chopped up turkey in gravy sauce served over a piece of toast. I loved it and looked forward to it every year.
This crockpot chicken recipe is truly comfort food. The one surprising ingredient that gives it a special “tang” is the addition of salsa verde. I knew right away when I saw that in the ingredients list that I would like this recipe as salsa verde is a favorite of mine.
I kept it very simple and just served the the crockpot meal with our old standby, frozen sweet potato fries. Lou and I did end up grabbing ourselves toast to eat with the Creamy chicken broccoli dinner, and this would be delicious with mashed potatoes.
Well, that’s all for now. This week I’m heading out to Wisconsin to spend a long weekend with my folks and family. Lou is off to London, Germany and Spain for a run of Dinosaur Jr shows. Take care and make yourself a cozy crockpot recipe!
I may have to try that this weekend. We’re always looking for crock pot recipes for bigger meals, and right now chicken is one of the only safe meats I can eat. Thanks for the share!
And have a good time traveling.
