Meal Prep Salad

A couple weeks ago I noticed a trend on TikTok of folks making “dense bean salads”. The idea being you meal prep a hearty salad and you can have a healthy, filling lunch at the ready during your week. I’ve been making cold bean salads for a decade plus, and they are definitely one of my favorite side dishes to have with dinner (especially steak). The idea of making them with some meat added and having them for lunch was the “new” part for me.

Here’s my take on it, I’ve made it a few times now. Lou and I gobble it up easily in a few days. Tasty, filling and truly easy!
