I’m so behind on my Meal Plan posts! Sorry! I’m playing catch up. This is the week Lou was gone to Durham, working on recording new material for the Folk Implosion. You should go check out his cute video about that week here on our substack. I had been doing mental preparation, talking myself up, getting ready for a week of cooking for one. I started the week off easy, making breakfast for dinner.
For Monday
two eggs sunny side up
bacon
two pieces of whole wheat toast
reheated tater tots from Sunday nights take out
one apple
Honestly this felt like a good start, easy, and it was a complete meal. In the past when Lou traveled and Izzy was younger I found it really difficult to actually prepare myself any food. I would graze on snack things and often order food delivery. But now that she’s getting older and more independent I can work in the kitchen with less interruptions. Not gonna lie, that’s a nice change.
