Hi Friends! Adelle here and if you are reading this, it means you are a subscriber, and I just want to say a big Thank You for your support! It really means so much to us. I’m excited to share with you the first post on my Cooking Corner, here on the Barlow Family General Substack.
Why am I doing a cooking corner? Well, I just love cooking. It’s kinda like my version of meditation. It’s a hobby. Maybe my only hobby? (No, knitting is not my hobby it’s more my Jobby.) I like talking about cooking and recipes and kitchen tools. I like cookbooks, instagram and Tik Tok videos of people cooking, people eating, people talking about food, etc. you get the idea. In an effort to bring some structure to my week I’m trying to MEAL PLAN. I know you’ve probably seen really elaborate and organized versions of this on social media but thats not exactly what I’m offering. This is also NOT meal prep (where people make ten over night oats in one day to eat throughout the week). This is just real life shit. And it won’t look the same week to week. Some weeks I barely “cook” and live off on frozen food, sandwiches and cereal. The two big things that make or break my week as far as successful meals go are related to Lou’s travel schedule and honestly, my depression. So, yea. That’s some real talk for ya. I’m going to just say for now that last week was a pretty good one for meals. I was motivated and actually, knowing I was going to do a post for substack helped me stay on track. WOO! My stepson Hendrix is usually with us week on and week off so that also influences my recipe choices. He was with us and so I tend to focus on finding recipes that will satisfy young and old. He really likes salmon so I almost always have a salmon recipe with him in mind. We are omnivores and so this your trigger warning if you are a vegetarian or vegan that meat is consumed in our household. If that makes you uncomfortable reading my posts and seeing my meal pics, as sad as I am to lose you, I‘d hate for you to be uncomfortable here. I have to be my authentic self. My hope is that you will come away feeling inspired to try something new in your kitchen this week or at the very least I offer you a nice distraction during your day.
I love making beef tacos because it’s one of the only dinners I make that Izzy (our daughter) will actually eat with us. I really like it when the kids and the adults can eat together at dinner. Hendrix always will but Izzy is a much pickier at meal time and often needs to eat an earlier dinner consisting of cereal and youtube kids. (oh by the way I’m not looking for suggestions with how/what to feed her just in case you were itching to give me ideas-but you weren’t gonna do that because it would be annoying right? YES)
I keep taco night pretty simple. Here’s what’s I made.
